Here's another recipe, this time from Toby's friend Ruth. LENTIL PATTIES
The recipe makes 18 patties. I got it from my friend Ruth. It comes highly recommended by my husband, who doesn't ordinarily like lentils, and by Ruth's three year old granddaughter.
Sauté until translucent in a small amount of oil
1 chopped onion
1 or 2 crushed cloves garlic
Add and continue to sauté
2 chopped or finely grated carrots or zucchini
Add (optional)
5 chopped sautéed mushrooms
or 1/2 lb steamed spinach (optional).
Place above all together in bowl and add:
3 eggs
1/2 cup cooked lentils
100 grams tomato paste
2 large handfuls of breadcrumbs or ground quaker oats
salt and pepper
Place large spoonfuls on an oven tray covered with baking paper
Bake in medium oven for 20 - 30 minutes till done.
Serve with sweet chili sauce, ketchup or homemade tomato sauce.
